Custom assets on Stellar

Hello everyone

I want to ask here I can use Stellar blockchain as ledger for recording our commercial transactions in USD instead of XLM.
We have tried some examples, but it looks like all transactions are happening in XLM... when we create a new account it tops up the account with 10,000 XLMs.

Our use case is to use blockchain as ledger for any currency.

Any pointers are much appreciated.
