Everything with the exception of native XLM on the SDEX is a derivate of the underlying asset or a minted token that lives only on the network. The USDC derivate is probably what your after. Tokens advertise whether or not they have anchor site or not. Trading the derivative is just as good in my opinion. When you want to exit just push it into XLM again so you can offramp via dozen of ways by using a cross-chain wallet that includes XLM and from there move it into any off-chain coin you want including USDC/USDT and the rest.
