Having a phone attached to you while cooking is a bit complicated and cumbersome.
Compared to the 500k cost of starting a restaurant, it's extremely easy and costs $0.
If I order food I want to minimise the work involved and not going over a video checking how the food was prepared.
The end customer only cares about the food, price, and quality. They will not watch the videos anymore than I watch security footage when playing blackjack. That's not the point. The point is that if I think someone is watching me, I'm not going to scratch my balls while cooking. Only a small percentage of blackjack security footage is ever watched to ensure the dealer isn't stealing, but the dealer doesn't know when.
You also spend a lot of time explaining how you could work around and hide the service from law enforcement. I think this will substantially limit the number of users that would try out something like this.
1) You're forgetting what caused bitcoin to skyrocket in price in the beginning.
2) Being in a grey area of the law gives the crypto currency a valid use case because it cannot be solved with fiat.
3) Controversy can generate press. Press causes the value of a crypto currency to skyrocket.
4) Money is like water. It always follows the path of least resistance. 500k to start a restaurant is a mountain compared to $0. For customers, $5 is cheaper than $10 or $20.
